RAISING BEEF CATTLE
Pe ople have kept cattle from the early days of civilization, and when I they left their own countries for others they usually took their native breeds with them.
Particularly important, in terms of the amount of beef they produce, are cattle from North America, Australia and Argentina. All these areas I have vast amounts of grassland where cattle can remain throughout the year without needing shelter. But even in those countries most beef cattle are now raised on farms and pastures. Sometime cattle are now sold directly to markets, but are sold as young steers (males that have been castrated) to cattle feeders in grain-growing areas. The feeders fatten the steers on the rich fields to make the meat more tender and give it more flavor than meat from cattle fed on grass.
This method of confining animals to small pens, usually in sheds, and feeding them large quantities of protein-rich food is known as "factory ' farming". It is usually used for beef cattle and pigs, and also in poultry-keeping for both eggs and meat. The animals are also fed growth-promoting hormones to make them put on weight quickly, antibiotics to prevent disease, and tranquilizers to prevent stress.
Winter food includes straw, hay, turnips, mangolds, kale and cabbage. Grass and other greenstaffs are put through a fermentation process and in this state are known as silage. Valuable winter feed also comes from barley, oats, and from imported oil seeds which, after the oil has been extracted, are very rich in protein.
